Superfood Muesli
This is a delicious breakfast and a great source of dietary fibre and nutrition. It will keep you going all morning. I like to soak it overnight to make it easier to digest or at least for a half hour to an hour in the morning. You can vary the ingredients as you like with different dried fruits, nuts and seeds for a bit of variety.
Ingredients

Handful of organic oats ( I sometimes use barley flakes, spelt flakes, quinoa or millet flakes - you can vary this - they are all available in a good health shop

Couple of desert spoons of chia seeds

Handful of raisins and goji berries

Handful of sunflower or pumpkin seeds or half/half

Half a teaspoon of grated lime rind or lemon rind

mug of oat milk or soya milk

pinch of cinnamon and cardamom powder ( to stimulate digestion )

teaspoon of maple syrup or good quality honey to sweeten
Method

Mix all ingredients together in a bowl. Soak overnight in milk, or at least for a half hour or hour in the morning whilst getting ready for work and cover with a plate. If it's colder out you can warm before you eat.
