SPLIT PEA SOUP
Makes 7 cups

Ingredients

2 tbs. or oil
-
1 tsp. of basil
-
1/4 tsp. of black pepper
-
1 tsp. of cumin powder
-
2 tsp. of salt
-
1/2 tsp. of ginger powder
-
6 cups of water
-
3 cups of split peas (soaked in cold water overnight)

1/2 cup of carrots
-
1/2 cup of celery
-
1/2 cup of green peppers
-
1/2 cup of potatoes
-
1 tbs. of lemon juice

Method
-
Over low heat, sauté spices in oil for a few minutes. Add in the chopped vegetables and stir well to coat them. Now add the water, split peas and lemon juice. Bering to a boil and them simmer for one hour or longer, if you want a creamy consistency.
